Percy “Frenchy” Creuzot opened Frenchy’s Po-Boy in 1969 on Scott Street,Houston, TX, the first enterprise the family undertook. In the beginning Frenchy’s Po-Boy sandwiches were the main menu item. Today, the menu has grown to include their famous seasoned chicken, King Ro Rotisserie Chicken, mouthwatering sides, and home-made desserts. Two locations carry the name of Frenchy’s now in addition to Frenchy’s Sausage Company "FCSI", which was originally created by Percy Creuzot, Jr. (a.k.a “Frenchy”) to produce chaurice, a Creole hot sausage, for his restaurant. As the demand for chaurice grew beyond the restaurant’s needs, Frenchy encouraged his son, Percy III (a.k.a “King), to join him in 1977.

Today, FSCI has grown from a small sausage manufacturer to a proud product line food service business specializing in Creole cooking. Frenchy has retired, and now Percy III is running the family business. FSCI is a family business that is dedicated to producing authentic Creole products with the same attention to quality and detail that company founder Frenchy strongly believed in.
